Simple Leche Plan Recipe





Leche Plan

Ingredients:

5 large eggs
1 can of 300ml condensed milk
1 can of 370ml evaporated milk
1 tsp. vanilla
1 cup of granulated sugar


Procedures:

1. Using all the eggs, separate the egg yolk from the egg white ( only the egg yolks will be used)

2. Place the egg yolks in the mixing bowl then beat them using a fork or a beater.

3. Add the condensed milk and mix thoroughly.

4. Pour in evaporated milk and vanilla in the mixing bowl. Stir well.

5. Remove the bubbles by using a strainer or a clean cloth in another bowl. Set aside.

6. Place the sugar in a saucepan and cook, swirling pan occasionally but not stirring, over a medium-high heat for 3-4  minutes, or until the sugar is a deep brownish caramel.

7. Pour the sugar into a llanera (an oval-shaped pan traditionally used in leche plans). Set the molds aside.

8. Prepare the steamer. Pour in water to just below the steamer. Bring to boil.

9. Pour the mixture into the molds or in the llanera containing the caramel. Cover the molds with an aluminum foil or a clean cloth. Arrange into the steamer ( The water should already boiling before placing the molds inside).

10. Steam for 30 minutes or until firm. Set aside to cool and then refrigerate for atleast 2 hours.

To serve: Run a knife around flan. Then invert onto a platter. The hard caramel base will have liquefied to form a runny caramel coating. Cut into slices and ready to serve.
